Classic Pomelo Spritz: Store in the fridge and shake the bottle before serving. Add 50ml Nicholson Pomelo Spritz to a tumbler filled with ice. Top with soda or tonic water and stir. Garnish with a squeezed lime wedge.

Pomelo Royale: Store in the fridge. Add 25ml Nicholson Pomelo and 100ml chilled champagne to a champagne flute. Garnish with lemon zest.

For a more complex take on this drink, replace the soda with tonic water.
Whatever mixer you are using, buy 150ml cans rather than 1litre bottles. This will ensure each serve is fully carbonated.
We use a tumbler for ease, elevate this cocktail using a large red wine glass.
