Creating a world class cocktail proposition for one of the Caribbean's finest hotels
Blue Waters: one of Antigua’s premier 5-star resorts. As an all-inclusive destination, it’s easy to prioritise the use of cheaper products to protect margins. The net result is a sub-standard cocktail offering.
Working closely with CEO Gary Randall and his new cocktail specialist Steve Hill, Nicholson and the Blue Waters team curated a range of premium cocktails using local ingredients, premium glassware, ice, and garnishes. All of which were listed on new cocktail menus bespoke to each bar.
To heighten the experience further, we installed cocktail taps into the busier bars, providing guests with the choice of buying a more premium beverage.

The Blue Waters collaboration offered a massive step change in service and cocktail quality, resulting in a record year for the hotel. Coming soon: 84 - a brand-new speakeasy serving world class cocktails, A-list DJ’s and intimate unplugged sets.
